In The Bird and Bush (Retail Centre) and the Ray Dining Room you will find our production kitchen of the College with Elly Mathieson, Martin Furlong and Jasmine Darcy. Every weekday from 6.00am - in what some even say is the heart of the College - the lights are on, the ovens are heating up and the grill is sizzling ready to take on the 7.30am breakfast rush.
So who are these staff members in their white crisp chef jackets? Allow me to introduce Martin, Jasmine and Elly, our hidden gems of the College. This is the team who produce our students' breakfasts, yummy morning teas and fresh home-made lunches during the term time. In any given week these three talented chefs can produce up to 600+ lunch meals, 340+ handmade sushi rolls and 280+ golden hash browns served from any of our three outlet locations throughout the College. But, that’s just a tip of the iceberg of what this talented trio can produce from our extensive menu.
Our catering team not only cater for our students but delight our staff’s taste buds with an array of cakes, muffins and slices, and wraps and sandwiches the list can go on and on. If you're yet to attend one of our in-house functions, you are truly missing out on a treat. Just recently Martin and his team served guests at an annual nightly function, blue swimmer crab and leek croquettes and let me say they enjoyed the sweet raspberry flavoured handmade chocolates. It doesn’t stop there! This year again they will cater for the 120 guests attending the Literacy Lunch, spoil our mum’s on Mother’s Day breakfast with a hot and cold buffet and delight our taste buds on the next Founders' Day.
Martin and his team work together with our suppliers to ensure only the best ingredients and fresh produce arrive at Somerset College. Currently the catering team is working closely with the Sustainable Spartans Committee, to bring in Eco-friendly bio degradable products in our servery, in a bid to help reduce the plastic in our environment. This is just the beginning of something big, so watch this space.

Please provide your all-time favourite recipe to cook or bake?
Hot Chocolate Fondant with ice cream
230g Dark chocolate
90g Plain Flour
Melt the butter and the chocolate together while melting whisk the eggs and sugar til pale and fluffy (sabayon consistency), then add melted chocolate and butter mixture and then fold in the flour.
Place in ramekins and chill for min 1hour (mixture can be made the day before) cook at 180 c approx. 5 to 10mins the middle should be warm and slightly runny. Serve with Cream or your favourite Ice cream.
